🍹 Random Cocktail Drop The Pineapple Express (A tropical refresher that hits different on a warm night) Ingredients • 2 oz light rum • 1 oz pineapple juice • ¾ oz fresh lime juice • ½ oz coconut cream • ½ oz simple syrup • Splash of soda water • Garnish: pineapple wedge + mint sprig How to make it Shake rum, pineapple juice, lime, coconut cream, and simple syrup hard with ice. Strain into a chilled highball glass over fresh ice. Top with a splash of soda. Garnish and serve. Perfect balance of sweet, tart, and creamy. hmmmm not a fan of coconut cream...but maybe might sub out the cream and just use Rumchata, kill two birds with one stone the rum and the cream 🤔

I used rumchata to make these cheesecake shooters last New Years Eve...sooooooo good!!! Just subbed the heavy cream for Rumchata and added about a table spoon of unflavored geletin powder
